  • 20 oz cheese tortellini (fresh or refrigerated)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella (for topping)
  • 3 cloves garlic, minced
  • 2 cups milk
  • 1 cup beef broth
  • Olive oil
  • Butter
  • Salt
  • Black pepper
  • Flour
  • Dijon mustard (optional)
  • Paprika

Instructions

  1. Preheat oven to 375°F (190°C). Season steak with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear steak for 2–3 minutes on each side until browned; set aside.
  3. In the same skillet, melt butter and sauté garlic for about 30 seconds. Stir in flour to form a roux; gradually whisk in milk and beef broth until smooth. Mix in cheddar cheese until creamy.
  4. Cook tortellini according to package directions but slightly undercook them; drain and toss with olive oil.
  5. Grease a 9×13-inch baking dish and mix cooked tortellini with seared steak and cheese sauce. Top with mozzarella.
  6. Bake uncovered for 20–25 minutes until bubbly and golden brown.
