  • 3 ounces instant vanilla pudding
  • 8 tablespoons butter (room temperature)
  • 2 large eggs (room temperature)
  • Red gel food coloring
  • Blue gel food coloring
  • For Buttercream Frosting: 2 egg whites
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup shortening
  • 4 tablespoons milk or heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cake mix and vanilla pudding. Add butter, eggs, and red food coloring; mix until combined.
  3. Divide the batter into two bowls; add blue food coloring to one bowl.
  4. Using a cookie scoop, drop rounded tablespoons of both batters onto the baking sheet, keeping them spaced apart.
  5. Bake for about 9 minutes until edges are lightly golden. Cool on a wire rack.
  6. For frosting: Beat egg whites until frothy; gradually add powdered sugar then vanilla extract, shortening, and milk until smooth.
  7. Once cookies are cool, spread frosting on half of the cookies and sandwich with another cookie.
