  • 2 pounds small new potatoes (Yukon Gold or red bliss)
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash the potatoes well and cut larger ones into uniform pieces.
  2. Place the potatoes in a large pot, cover with cold water, and add salt.
  3. Bring water to a boil over high heat, then reduce to simmer until fork-tender (15-20 minutes).
  4. Drain in a colander and let cool slightly.
  5. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
  6. In a large mixing bowl, combine cooled potatoes with olives, feta cheese, parsley, and dill.
