  • 1 lb andouille sausage, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a skillet over medium heat, heat vegetable oil and brown the sliced sausage for about 5-7 minutes. Remove and set aside.
  2. In the same skillet, sauté onion, green bell pepper, and garlic until softened (about 3-4 minutes).
  3. Sprinkle flour over vegetables; cook for another 1-2 minutes to form a roux.
  4. Slowly add chicken broth while stirring continuously until thickened (about 5-7 minutes).
  5. Add heavy cream, Cajun seasoning, thyme, salt, and pepper; return sausage to skillet.
  6. Simmer for an additional 5 minutes before serving.
