  • 1/2 cup brown sugar
  • 1/3 cup applesauce
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup butter (for frosting)
  • 12 tbsp water, milk or more apple cider (for frosting)
  • 1 tsp vanilla (for frosting)
  • 1/2 tsp cinnamon (for frosting)
  • pinch of nutmeg (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, mix oat flour, baking powder, salt, and spices. In another bowl, whisk melted butter, brown sugar, applesauce, apple cider, vanilla, and eggs until smooth.
  3. Combine wet ingredients with dry ingredients until just mixed; avoid overmixing.
  4. Pour batter into liners and bake for 20–22 minutes or until a toothpick comes out clean.
  5. Cool on a wire rack before frosting with spiced buttercream made from softened butter, powdered sugar, and spices.
