  • 1½ cups peeled and diced apples (about 2 medium apples, preferably Granny Smith or Honeycrisp)
  • For the Streusel Topping: ½ cup all-purpose flour, ⅓ cup packed brown sugar, ¼ cup old-fashioned oats, 1 teaspoon ground cinnamon, ¼ teaspoon salt, ¼ cup cold unsalted butter (cubed)
  • For the Cream Cheese Frosting: 8 oz cream cheese (softened), ¼ cup unsalted butter (softened), 3 cups powdered sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Make the streusel by mixing flour, brown sugar, oats, and cinnamon; cut in cold butter and refrigerate.
  3. In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter with granulated sugar until fluffy; add eggs one at a time followed by vanilla extract.
  5. Alternate adding dry ingredients and milk to the butter mixture until just combined; fold in diced apples.
  6. Fill muffin cups two-thirds full with batter and top with streusel.
  7. Bake for 22-25 minutes until golden brown; cool before frosting.
