  • 1/4 cup green onions (chopped)
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger (grated)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. In a large salad bowl, combine mixed greens, shredded carrots, red cabbage, dried cranberries, nuts, and chopped green onions. Toss gently.
  2. Add the shredded chicken and toss again until evenly distributed.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, and minced garlic. Season with salt and pepper.
