  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • Cajun seasoning to taste
  • Cooked white rice for serving

Instructions

  1. Prep vegetables by finely chopping onion, bell peppers, celery, green onions, and parsley; mince garlic.
  2. Heat avocado oil in a large skillet over medium-high heat; sear chicken thighs until browned (3-5 minutes each side). Set aside.
  3. In the same skillet, reduce heat to medium and melt butter; whisk in flour until smooth. Cook until roux turns medium brown (10-15 minutes).
  4. Add chopped vegetables to roux and sauté until softened (about 10 minutes); stir in minced garlic and cook for another minute.
  5. Gradually whisk in warmed chicken broth, add browning sauce, return chicken to skillet, and simmer on low for about 30 minutes until thickened.
