  • 2 tablespoons olive oil
  • 1 medium white onion (diced)
  • 6 garlic cloves (4 for risotto, 2 for mussels, minced)
  • 1 1/4 cup white wine (1/4 for risotto, 1 cup for mussels)
  • 2 cups Arborio risotto
  • 4 tablespoons lemon juice
  • 4 tablespoons tomato paste
  • 4 tablespoons water
  • 6 cups fish stock or vegetable broth
  • 7 ounces live mussels
  • 7 ounces prawns or shrimp
  • 7 ounces baby scallops
  • 7 ounces baby squid (calamari rings)
  • 1/2 cup parmesan cheese (grated)
  • 2 tablespoons flat-leaf parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. In a stockpot, combine white wine, garlic, and salt. Add live mussels and steam until they open; reserve some mussels in their shells.
  2. Heat fish stock in another pot until warm.
  3. Sauté diced onion and minced garlic in olive oil until translucent in a tall-sided pot.
  4. Toast Arborio rice for 3–5 minutes before deglazing with white wine and lemon juice.
  5. Gradually add warm fish stock one ladle at a time while stirring continuously for about 25 minutes.
  6. Stir in shucked mussels, prawns, scallops, and squid; cook until tender.
  7. Finish with grated parmesan cheese and seasoning to taste.
