  • 12 large eggs
  • 2 ripe avocados
  • 3 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1/2 jalapeño, deseeded and minced
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro, finely chopped

Instructions

  1. Hard boil the eggs by covering them with water in a large saucepan, bringing it to a boil, then removing from heat and letting them sit covered for 18 minutes. Cool in an ice water bath and peel.
  2. Slice each egg in half lengthwise and scoop out the yolks into a food processor. Add avocados, lime juice, garlic, jalapeño, cayenne pepper, and salt; blend until smooth.
  3. Stir in cilantro and adjust seasoning to taste.
  4. Fill each egg white with the avocado mixture using a spoon or piping bag. Garnish with additional cilantro or cayenne before serving.
