  • 34 cups bread flour
  • 3 tablespoons salted butter (for brushing)

Instructions

  1. In a mixing bowl, combine warm water and instant yeast; stir until dissolved and frothy.
  2. Add molasses, honey, vegetable oil, and cocoa powder to the yeast mixture; whisk until combined.
  3. In another bowl, whisk together whole wheat flour, bread flour, and salt.
  4. Gradually mix dry ingredients into wet ingredients until fully incorporated.
  5. Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
  6. Place dough in an oiled bowl, cover with a kitchen towel, and let rise in a warm place until doubled in size (about 90 minutes).
  7. Punch down the dough gently; shape into a loaf and place in a greased pan.
  8. Cover again; let rise for another 30–45 minutes until puffy.
  9. Preheat oven to 350°F (175°C).
  10. Brush melted butter over the top of the risen dough; sprinkle oats if desired.
  11. Bake for about 30 minutes or until golden brown.
