  • 3 large egg yolks
  • 3 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 2 & 1/2 cups all-purpose flour
  • 1 tablespoon vegetable oil (for topping)
  • 2 & 1/4 teaspoons instant yeast
  • 1/4 cup unsalted butter, melted and cooled
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for burnt sugar topping)
  • 1/4 cup water
  • 1/8 teaspoon salt (for burnt sugar topping)

Instructions

  1. Prepare the pastry cream by whisking together egg yolks, cornstarch, sugar, and vanilla in one bowl; heat milk in another until simmering. Gradually combine and cook until thickened. Cool before use.
  2. Make the dough by mixing lukewarm milk with yeast and sugar. Combine with flour, salt, melted butter, and egg. Knead until smooth; let rise until doubled.
  3. Roll out the dough, cut into circles, fill with pastry cream using a piping bag, and cover with another circle.
  4. Bake at 375°F (190°C) for about 10 minutes until golden brown.
  5. For the topping, mix sugar and water over medium heat until amber color forms; drizzle over cooled donuts.
