  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together balsamic vinegar, honey or maple syrup, basil, oregano, and minced garlic.
  4. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
  5. Place seared chicken in the baking dish, pour the balsamic mixture over top, and scatter cherry tomatoes around.
  6. Bake for 20-25 minutes until almost cooked through.
  7. Sprinkle mozzarella cheese on each breast and bake for an additional 5-10 minutes until melted and bubbly.
