  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs, room temperature
  • 23 overripe bananas, mashed (about 1 and 1/2 cups)
  • 1 recipe of homemade caramel sauce
  • 1 recipe of salted caramel cream cheese frosting

Instructions

  1. Preheat oven to 350°F (177°C) and line a cupcake pan with paper liners.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a stand mixer, cream together butter and sugars until light and fluffy. Add oil, sour cream, and vanilla; mix well.
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Gradually incorporate dry ingredients into the wet mixture. Fold in mashed bananas until just combined.
  6. Fill cupcake liners two-thirds full with batter and bake for 20–25 minutes until a toothpick comes out clean. Let cool completely.
  7. Prepare frosting as directed. Optionally core cooled cupcakes and fill with caramel sauce before frosting them.
