  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 2 cups panko breadcrumbs
  • Sriracha (to taste)
  • Various seasonings
  • 1 teaspoon Sriracha (or more to taste)
  • 2 tablespoons honey
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • canola oil (for frying)
  • parsley (chopped, for garnish)

Instructions

  1. Marinate chicken tenderloins in buttermilk mixed with Sriracha for at least 15 minutes.
  2. In a separate bowl, whisk together mayonnaise, sweet chili sauce, honey, and additional Sriracha to prepare the bang bang sauce.
  3. Coat marinated chicken in a mixture of flour, cornstarch, garlic powder, salt, and pepper.
  4. Heat canola oil in a deep fryer or large pot to 350°F. Fry chicken in batches until golden brown, about 6 minutes each.
  5. Serve hot, drizzled with the bang bang sauce and garnished with parsley.
