  • 90g unsalted butter
  • 150g light brown sugar
  • 160g all-purpose flour
  • 160g dulce de leche
  • 170g heavy whipping cream
  • 45g biscoff cookies
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 tbsp. granulated sugar
  • ⅛ tsp. salt
  • fresh banana slices
  • biscoff cookie crumbles

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe banana in a mixing bowl. Add softened butter and brown sugar; mix until smooth.
  3. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  5. Gently fold in crushed biscoff cookies.
  6. Drop tablespoon-sized portions onto the prepared baking sheet and bake for about 10 minutes until edges are golden.
  7. While cooling, whip heavy cream with sugar until soft peaks form.
  8. Once cooled, spread dulce de leche on each cookie and top with whipped cream and fresh banana slices.
