  • 2 pounds boneless, skinless chicken breasts
  • 1 cup BBQ sauce (divided)
  • 4 ears corn
  • 8 cups romaine lettuce
  • 1 avocado, diced
  • Fresh herbs (dill, parsley, basil)

Instructions

  1. Cut chicken into bite-sized pieces and marinate in half of the BBQ sauce for at least 15 minutes.
  2. Thread marinated chicken onto pre-soaked wooden skewers.
  3. Grill skewers over medium-high heat for 10–15 minutes until cooked through, brushing with remaining BBQ sauce towards the end.
  4. Grill corn until tender; cut kernels off cobs.
  5. In a large bowl, combine romaine lettuce, green onions, grape tomatoes, black beans, cilantro, basil, corn kernels, and diced avocado.
  6. Drizzle with dressing made from whisking together avocado oil, egg, coconut milk, lemon juice, red wine vinegar, salt, onion powder, minced garlic, dill fronds, parsley, and pepper.
  7. Toss salad gently and serve warm with grilled chicken skewers on top.
