  • 14.5 ounces diced tomatoes
  • 10.75 ounces red enchilada sauce
  • 15 ounces black beans (drained and rinsed)
  • 15 ounces corn (drained)
  • 1 cup cooked rice
  • 1 ½ cups sharp cheddar cheese (shredded)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 3-quart casserole dish with cooking spray.
  2. In a large skillet over medium heat, cook the ground beef and diced onions until the beef is browned and the onions are tender.
  3. Add minced garlic and cook for another two minutes until fragrant.
  4. Stir in diced tomatoes, red enchilada sauce, black beans, corn, cooked rice, and seasonings; mix well.
  5. Simmer the mixture for about 10 minutes while covered.
  6. Spoon the mixture into the prepared casserole dish and top with shredded cheese.
