  • 2 pints cherry or grape tomatoes
  • 1 zucchini (sliced)
  • 1/2 sweet onion (diced)
  • 4 cloves garlic
  • 1/2 cup olive oil
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 1 block feta cheese (drained)
  • 1 pound pasta
  • Fresh basil for garnish
  • Grated parmesan for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, zucchini, diced onion, minced garlic, olive oil, garlic powder, red pepper flakes, salt, and pepper. Toss gently.
