Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together light brown sugar and lemon zest with softened butter until fluffy. Beat in egg and vanilla essence.
  3. Mix flour, baking powder, and salt in another bowl; gradually add to the wet mixture to form dough.
  4. Scoop tablespoon-sized portions onto prepared sheets and flatten slightly. Bake for 10-12 minutes until golden.
  5. Prepare lemon filling by melting butter in a saucepan; stir in sugar, lemon juice, zest, egg yolks, and salt until thickened.
  6. Beat egg whites until soft peaks form; gradually add sugar until stiff peaks form. Fold in cornstarch and vanilla essence.
  7. Once cookies cool, fill each with lemon filling and top generously with meringue. Return to the oven for an additional 5-7 minutes until meringue is lightly browned.
