  • Marinara sauce
  • Dried Italian seasoning
  • Ricotta cheese
  • Egg
  • Mozzarella cheese
  • Parmesan cheese
  • Oven-ready lasagna noodles
  • Spinach

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat. Add onion, bell pepper, mushrooms, and zucchini; sauté until softened (7–8 minutes). Stir in garlic for 30 seconds.
  3. Mix in marinara sauce, Italian seasoning, salt, pepper, red pepper flakes, parsley; simmer for 10–15 minutes. Add spinach at the end.
  4. In a bowl, combine ricotta cheese with lightly beaten egg.
  5. In a baking dish, layer vegetable sauce, noodles, ricotta mixture, and cheeses; repeat layers as needed.
  6. Cover with foil and bake for 35 minutes. Remove foil and bake uncovered for an additional 10–15 minutes until bubbling and golden brown.
  7. Let rest for 15 minutes before serving.
