  • 1 tbsp ground cinnamon (for filling)
  • 3 tbsp softened vegan butter (for filling)
  • ¼ cup melted Biscoff cookie butter
  • 56 crushed Biscoff cookies
  • 1 tsp vanilla extract (for icing)
  • 2 tbsp vegan cream cheese
  • 1 cup powdered sugar
  • 2 tbsp melted Biscoff cookie butter (for icing)
  • 12 tsp dairy-free milk (as needed for icing)

Instructions

  1. Combine warm dairy-free milk and sugar in a bowl; sprinkle yeast on top and let it froth for 5–10 minutes.
  2. Mix in flour, cinnamon, salt, melted vegan butter, and vanilla until combined; knead until smooth.
  3. Let the dough rise in a warm place for about 1 hour until doubled.
  4. Roll out the dough, spread softened vegan butter, sprinkle cinnamon-sugar mixture, add melted Biscoff and crushed cookies.
  5. Roll tightly into a log, cut into 8 pieces, and place in a baking sheet.
  6. Bake at 350°F (175°C) for 20 minutes until golden.
  7. Whisk together icing ingredients; drizzle over warm rolls before serving.
