  • 1/2 cup all-purpose flour (plus 2 tablespoons)
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/2 cup butter (room temperature)
  • 1/2 cup Biscoff Spread (or Cookie Butter)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt; set aside.
  3. In a stand mixer bowl, cream together butter, Biscoff Spread, granulated sugar, and brown sugar until smooth. Add egg and vanilla; mix until well combined.
  4. Gradually add dry ingredients to wet mixture on low speed until just blended. Chill dough for 30 minutes.
  5. Form rounded tablespoons of dough and place on the prepared baking sheet about two inches apart. Bake for 8 to 10 minutes until edges are golden brown. Let cool for five minutes before transferring to a wire rack.
