  • ½ cup vegetable oil
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup hot water
  • 1 cup fresh blackberries
  • 2 tablespoons lemon juice
  • ¼ cup powdered sugar (for the compote)
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla until smooth. Combine wet ingredients with dry until just mixed; then stir in hot water until smooth.
  4. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool in pans before transferring to wire racks.
  5. For the compote, cook blackberries with lemon juice and powdered sugar over medium heat for about 5-7 minutes until berries soften.
  6. Assemble the cake by layering it with blackberry compote between layers and on top.
