  • 3 tbsp (38 g) granulated white sugar (for filling)
  • 1/4 cup (50 g) granulated white sugar (for cookies)
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by beating cold cream cheese with granulated sugar and vanilla until smooth. Refrigerate.
  2. Preheat oven to 350°F (175°C). In a bowl, whisk together sugars, flour, black cocoa powders, baking powder, and salt.
  3. Cream together softened butter with sugars until fluffy; beat in egg yolks and vanilla.
  4. Gradually mix dry ingredients into wet mixture until combined.
  5. Scoop dough onto a baking sheet; flatten slightly and place cheesecake filling in the center before wrapping dough around it.
