  • 3 cups blackberries (fresh or frozen)
  • 2 cups milk
  • 1 vanilla bean
  • 4 egg yolks
  • 1 ½ cups flour
  • ½ cup sugar
  • 1 stick cold butter (diced)
  • 1 ½ tsp water
  • ¾ tsp unflavoured gelatin
  • 1 tbsp cornstarch
  • pinch kosher salt
  • 1 tsp lemon juice
  • 2 earl grey tea bags
  • 4 tbsp cornstarch
  • pinch kosher salt
  • 2 tbsp butter
  • ¾ cup heavy whipping cream
  • fresh blackberries (for garnish)

Instructions

  1. Prepare the blackberry filling by cooking the blackberries with water and sugar until soft, then purée and strain.
  2. Bloom gelatin in water and mix into the blackberry purée with cornstarch, salt, and lemon juice.
  3. Heat milk with vanilla bean and Earl Grey tea bags; steep for 10 minutes.
  4. Whisk egg yolks, sugar, cornstarch, and salt in a bowl; temper with warm milk, then return to low heat until thickened.
  5. Assemble by pouring blackberry filling into tart crusts followed by cream filling; refrigerate for at least two hours before serving.
