  • 1/3 cup blackberry puree (from fresh or frozen blackberries)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 1/2 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 34 tablespoons blackberry puree (strained to remove seeds, for frosting)
  • 23 tablespoons heavy cream or milk (for frosting)
  • Fresh blackberries (for garnishing)
  • Mint leaves (optional, for garnishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time and stir in the vanilla extract.
  5. Gradually add the dry ingredients alternately with milk; mix until just combined.
  6. Divide the batter into two bowls; fold blackberry puree into one.
  7. Alternate spoonfuls of both batters into each cupcake liner and swirl lightly with a toothpick.
  8. Bake for 18–20 minutes or until a toothpick comes out clean; cool completely.
  9. Prepare frosting by beating softened butter, gradually adding powdered sugar and heavy cream until smooth. Stir in vanilla and blackberry puree.
  10. Frost cooled cupcakes using a piping bag for an elegant finish.
