  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Olive oil and various seasonings (paprika, garlic powder, onion powder, black pepper)

Instructions

  1. Cook spinach in a skillet over medium heat until wilted; drain excess liquid. Combine with cream cheese, Parmesan, minced garlic, salt, and pepper in a bowl.
  2. Carefully slice pockets into each salmon fillet without cutting through completely.
  3. Generously stuff each fillet with the spinach mixture.
  4. Season the tops of the fillets with a blend of paprika, garlic powder, onion powder, black pepper, and salt.
  5. Sear the salmon in olive oil over medium-high heat for 2-3 minutes per side until blackened.
  6. Transfer to a preheated oven at 350°F (175°C) and bake for 10-12 minutes until cooked through.
  7. Serve hot with lemon wedges.
