  • 100 g active sourdough starter
  • 500 g bread flour
  • 355 g room temperature water (335g + 20g)
  • 10 g salt
  • 100 g fresh blueberries
  • Zest of one lemon

Instructions

  1. Feed your starter 6-10 hours before baking.
  2. In a large bowl, mix 335g water, starter, and flour until combined; let rest for 20-30 minutes.
  3. Add salt and remaining water (20g), knead lightly for 1-2 minutes.
  4. Cover and let bulk ferment for 30 minutes; add blueberries and lemon zest, performing stretch-and-fold every 30 minutes for about two hours.
  5. Shape the dough and place in a proofing basket; let rise for two hours at room temperature or refrigerate.
  6. Preheat oven to 500°F (260°C) with Dutch oven inside.
  7. Score the loaf and bake covered for 20 minutes; reduce temperature to 400°F (200°C) and bake for another 30-35 minutes until dark brown.
  8. Cool on a rack for 1-2 hours before slicing.
