  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line an 8-inch square baking pan with parchment paper.
  3. In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
  4. Stir in melted butter and vanilla until crumbly.
  5. Press half of the mixture into the bottom of the pan.
  6. Toss blueberries with granulated sugar and cornstarch; spread over the oat base.
  7. Crumble remaining oat mixture on top; press gently.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool completely before cutting into squares.
