  • 8 oz penne or rotini pasta
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and red bell pepper for 3-4 minutes until softened. Add garlic and cook for an additional minute.
  2. Raise heat to medium-high; add chicken pieces and cook until browned and cooked through (about 5-7 minutes).
  3. While the chicken cooks, boil salted water in a pot and cook pasta according to package instructions until al dente; drain.
  4. Once chicken is done, pour in chicken broth, buffalo sauce, and ranch dressing; bring to a simmer.
  5. Stir in cooked pasta and mix well so everything is coated in sauce. Heat for an additional 2-3 minutes.
  6. Remove from heat and sprinkle cheese on top; cover briefly to allow cheese to melt.
