  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ¼ cup heavy cream
  • 1 cup milk
  • ¼ cup granulated sugar
  • 2 egg yolks
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • ½ cup heavy cream
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter; press into springform pan and bake for 10 minutes.
  3. In a bowl, beat cream cheese until smooth; mix in ¾ cup granulated sugar, then add eggs one at a time, followed by sour cream and heavy cream. Pour over crust and bake for 60 minutes.
  4. Prepare custard by heating 1 cup of milk and ¼ cup of sugar; whisk egg yolks with 1 tablespoon of cornstarch and gradually incorporate warm milk mixture. Cook until thickened.
  5. Once cheesecake cools, spread custard on top and refrigerate for at least two hours.
  6. For ganache, heat ½ cup heavy cream and pour over 6 oz chocolate chips; let sit then stir until smooth. Pour over chilled custard layer and refrigerate until ready to serve.
