  • ½ cup unsalted butter (at room temperature)
  • ½ cup reserved bacon fat (chilled)
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 3 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 8 ounces dark chocolate (chopped)

Instructions

  1. Cook the diced bacon in a skillet until golden and crispy. Drain on paper towels, reserving fat.
  2. Preheat your oven to 375°F. In a bowl, whisk together flour, baking soda, salt, and baking powder.
  3. In a separate bowl, cream butter, chilled bacon fat, sugars, bourbon, and vanilla with an electric mixer until smooth. Add eggs one at a time.
  4. Gradually mix in the dry ingredients until combined. Stir in cooked bacon and dark chocolate.
  5. Drop rounded tablespoonfuls onto lined baking sheets and bake for 9 to 11 minutes until lightly browned.
  6. Cool on the sheet for 5 minutes before transferring to a wire rack.
