  • 3 tbsp butter
  • 1 tbsp corn syrup

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch or Bundt pan.
  2. In a blender, combine chopped carrots, eggs, and vegetable oil until smooth.
  3. Add sugar to the blender mix and pulse briefly to combine.
  4. In a mixing bowl, whisk together flour, baking powder, and salt.
  5. Pour the blended mixture into the dry ingredients and stir gently until just combined.
  6. Bake for 30-40 minutes or until a toothpick inserted comes out clean.
  7. Cool for about 15 minutes before glazing.
  8. For the glaze, melt chocolate chips with butter and corn syrup; add milk if necessary for consistency.
  9. Pour glaze over the cooled cake before serving.
