  • 4 medium russet potatoes
  • 2 cups shredded cheddar cheese
  • 1/2 cup non-fat Greek yogurt
  • 4 tablespoons salted butter
  • 1 and 1/2 cups cooked broccoli, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Bake washed russet potatoes for about 1 hour until soft. Cool slightly, then slice in half lengthwise and scoop out the insides into a bowl.
  3. Mash potato pulp with butter, Greek yogurt, buttermilk, salt, pepper, and seasonings until smooth. Stir in chopped broccoli and 3/4 cup of cheddar cheese.
  4. Fill potato skins with the mixture, topping each with remaining cheese. Return to the oven for an additional 20-25 minutes or until cheese is melted.
