  • 1 1/2 cups packed Domino® light brown sugar
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 1/4 cups milk
  • 1 1/4 cups unsalted butter, room temperature
  • 9 cups Domino® powdered sugar
  • 8 oz mascarpone cheese, cool but not cold
  • 3/4 tsp salt
  • 6 tbsp peach filling (from above)
  • 6 tbsp all-purpose flour (optional for crumble)
  • 3 tbsp packed Domino® light brown sugar (optional for crumble)
  • 2 tbsp cold unsalted butter, sliced (optional for crumble)

Instructions

  1. Prepare the peach filling by cooking chopped peaches with brown sugar, cornstarch, and lemon juice until thickened. Let cool.
  2. For the cake layers, cream butter and brown sugar, add eggs one at a time, then mix in dry ingredients and milk.
  3. Bake in prepared pans at 350°F for about 30-35 minutes.
  4. Cool cakes completely before frosting with mascarpone mixture layered with peach filling.
  5. Assemble the cake by alternating layers of frosting and peach filling; chill before serving.
