  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat the oven to 350°F and grease two 8×8 baking pans lined with parchment paper.
  2. In a medium bowl, mix melted butter, granulated sugar, and brown sugar until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract.
  5. In a separate bowl, combine flour, cocoa powder, and salt. Gradually add to the wet mixture.
  6. Divide batter into prepared pans and bake for about 30-40 minutes until a toothpick comes out barely clean.
  7. Cool in pans for about 10 minutes before transferring to a rack to cool completely.
  8. Spread softened ice cream on one brownie layer; top with the second layer and freeze for at least six hours or overnight.
  9. Cut into squares and enjoy!
