  • 12.35 oz cream cheese (softened)
  • 1 cup shredded cheese mix (mozzarella and Parmesan)
  • 1/2 cup oil-packed sun-dried tomatoes
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup olives (chopped)
  • 2 cloves garlic (minced)
  • 1 cup panko breadcrumbs
  • 1 tbsp butter

Instructions

  1. Finely chop half of the sun-dried tomatoes; set aside the other half for garnish.
  2. In a mixing bowl, combine cream cheese, shredded cheese, chopped sun-dried tomatoes, basil, olives, garlic, oregano, salt, and pepper until well mixed.
  3. Form the mixture into a ball and wrap tightly in plastic wrap. Chill for at least 30 minutes.
  4. Toast panko breadcrumbs in a skillet with melted butter until golden brown; cool.
  5. Once chilled, roll the cheese ball in toasted breadcrumbs to coat evenly.
  6. Garnish with diced tomatoes and basil leaves before serving with baguette slices or crackers.
