  • 1/2 cup hot buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels
  • 1 cup black beans
  • 1 cup cherry tomatoes
  • 1/2 cup diced red onion
  • 1 avocado
  • 1/4 cup crumbled blue cheese
  • 1/4 cup ranch dressing
  • Fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub over chicken breasts.
  3. Place the chicken in a baking dish and bake for 20–25 minutes until fully cooked.
  4. Let the chicken rest before slicing it into strips.
  5. In a large bowl, combine brown rice, corn, black beans, cherry tomatoes, and diced red onion. Divide into serving bowls.
  6. Top each bowl with sliced chicken, avocado slices, blue cheese, hot buffalo sauce, ranch dressing, and cilantro.
