  • 1 medium spaghetti squash (about 22.5 lbs)
  • 1 ¼ lbs cooked shredded chicken breast
  • ½ cup buffalo sauce
  • ¼ cup creamy ranch dressing (optional)
  • ¼ cup crumbled blue cheese (optional)
  • 2 ribs celery, thinly sliced
  • 2 green onions, sliced
  • ½ cup diced red bell pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and remove seeds. Place cut-side down on a lined baking sheet.
  3. Bake for about 45 minutes, until tender.
  4. While baking, combine shredded chicken, buffalo sauce, celery, green onions, red bell pepper, ranch dressing, and blue cheese in a mixing bowl.
  5. Once squash is baked and cool enough to handle, flip cut-side up and fluff strands with a fork.
  6. Fill each half with the chicken mixture and bake for an additional 10 minutes.
