  • 1/3 cup cornstarch
  • 1/3 cup non-dairy milk (unsweetened)
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 cup buffalo sauce
  • 23 cups chopped romaine
  • 1/2 cup shredded vegan cheddar
  • 1/2 cup matchstick carrots
  • 1 avocado (sliced)
  • 4 large tortillas
  • 1 cup almond milk yogurt (unsweetened)
  • 2 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp fresh dill (minced)
  • 1 tbsp fresh parsley (minced)

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Slice tofu into strips and coat with cornstarch mixed with garlic powder and salt.
  3. Dip coated tofu in non-dairy milk and bake on a parchment-lined sheet for 25 minutes, flipping halfway.
  4. Toss baked tofu in buffalo sauce and return to the oven for an additional 5 minutes.
  5. Spread vegan ranch on tortillas; layer with romaine, carrots, avocado, and buffalo tofu.
  6. Roll tightly and grill if desired for extra crispiness.
