  • 1 head of garlic
  • 3 tbsp olive oil
  • 50 grams (1/4 cup) butter
  • 90 grams (1/3 cup) warm milk
  • 7 grams (2 1/4 tsp) active dry yeast
  • 200 grams (1 1/2 cups) all-purpose flour
  • 200 grams (2 cups) mozzarella cheese
  • 2 egg yolks
  • Salt and sugar to taste

Instructions

  1. Roast the garlic: Cut the top off a whole garlic head, drizzle with olive oil and salt, wrap in foil, and roast at 160°C (320°F) for about 2 hours until soft.
  2. Prepare garlic butter by mixing softened roasted garlic with butter, parsley, and reserved garlic oil.
  3. Combine warm milk, yeast, and honey; let it proof for 10 minutes.
  4. In a mixing bowl, combine flours, sugar, milk powder (if using), butter, salt, egg yolks, and the yeast mixture; knead until smooth.
  5. Proof the dough for about 1 hour and 30 minutes until doubled in size.
  6. Roll out the dough, spread garlic butter on top, sprinkle mozzarella cheese, roll tightly into a log shape, and cut into portions.
  7. Let the cut portions proof again for 30 minutes before baking at 175°C (350°F) for about 20-25 minutes.
