  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper; spread on a baking sheet.
  3. Roast sweet potatoes for 20-25 minutes until tender and caramelized.
  4. Rub chicken breasts with remaining olive oil and Cajun seasoning.
  5. Cook seasoned chicken in a skillet over medium-high heat for about 6-7 minutes per side until internal temperature reaches 165°F (75°C). Let rest before slicing.
  6. Sauté diced onion, bell pepper, and broccoli in the same skillet for 5-7 minutes until tender.
  7. Assemble bowls by layering roasted sweet potatoes at the bottom, followed by sautéed veggies and sliced chicken on top.
