  • 1 lb elbow macaroni
  • 1/2 cup shallots (finely minced)
  • 1 cup red bell pepper (finely chopped)
  • 1 cup celery (finely chopped)
  • 1 1/2 cups mayonnaise
  • 3 tbsp red wine vinegar
  • 3 tbsp Creole/Cajun mustard
  • Cajun seasoning
  • smoked paprika
  • kosher salt
  • black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Cook the elbow macaroni in salted boiling water for 9 minutes until tender. Drain and rinse under cool water.
  2. In a large bowl, combine the rinsed pasta with olive oil to coat.
  3. In a separate bowl, mix shallots, bell pepper, celery, spices, mayonnaise, mustard, vinegar, and hot sauce. Adjust consistency with water if needed.
  4. Combine the pasta with the dressing mixture until well incorporated.
  5. Garnish with chopped parsley before serving.
