  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 4 cups chicken or vegetable stock
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, bell pepper, celery, and carrot until softened (5–7 minutes).
  2. Add diced potatoes and mix well.
  3. Pour in stock to fully submerge potatoes; bring to a boil.
  4. Reduce heat to simmer; add Cajun seasoning, smoked paprika, cayenne pepper, thyme, salt, and black pepper. Stir well.
  5. Cover and simmer for 20–25 minutes until potatoes are tender.
  6. Use an immersion blender to partially blend the soup for desired consistency.
  7. Stir in heavy cream and cheddar cheese until melted.
  8. Taste and adjust seasoning if needed before serving hot.
