  • 12 oz Smoked Sausage (Andouille or Kielbasa)
  • 1 cup Long-Grain White Rice
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 Medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Sauté diced onion and bell peppers for about 3–4 minutes until softened; add minced garlic and cook for another minute.
  3. Add sliced smoked sausage and brown for about 5 minutes.
  4. Stir in rinsed rice and chicken broth; add Cajun seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover the skillet, and simmer for about 15 minutes until rice is tender.
  6. Fluff with a fork before serving; garnish with fresh parsley or green onions if desired.
