  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon granulated sugar (optional)
  • 20 medium shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1 jalapeño (thinly sliced)
  • 2 tablespoons chopped fresh chives
  • Lemon wedges (for serving)

Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then cover and let sit for 12 minutes. Drain and cool.
  2. Peel the eggs, halve them lengthwise, and remove yolks. Mash yolks in a bowl and mix with mayonnaise, mustard, hot sauce, spices, and sugar until smooth. Chill.
  3. Season shrimp with remaining spices and sauté in olive oil over medium-high heat until cooked through. Let cool.
  4. Fill egg white halves with the yolk mixture using a piping bag or spoon. Top each egg with a shrimp slice and garnish with chives.
  5. Serve immediately on a platter with lemon wedges.
