Ingredients

  • 1 small cantaloupe
  • 1 small honeydew melon
  • 1 cup ciliegine mozzarella
  • 1/4 cup fresh basil, chopped
  • 3 ounces prosciutto, sliced
  • 1 cup cherry tomatoes, halved
  • Pineapple vinegar (or any vinegar)
  • Olive oil
  • Fresh cracked pepper
  • Sea salt

Instructions

  1. Cut both melons in half and use a melon baller to scoop out the flesh. Transfer the melon balls to a large salad bowl.
  2. Add ciliegine mozzarella, chopped basil, sliced prosciutto, and halved cherry tomatoes to the bowl.
  3. In a separate bowl, whisk together pineapple vinegar, olive oil, fresh cracked pepper, and sea salt until well combined.
  4. Pour the dressing over the salad mixture and toss gently to coat everything evenly.
  5. Chill in the refrigerator until ready to serve.
