Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions
  • Fresh cilantro

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Brown chicken thighs skin-side down for 5-7 minutes until golden.
  3. Flip the chicken; add soy sauce, brown sugar, garlic, and ginger. Stir to combine.
  4. Pour in chicken broth to cover the chicken completely; bring to a gentle boil. Reduce heat and simmer for 20 minutes until cooked through.
  5. Meanwhile, rinse rice under cold water; cook in a separate pot with water until fluffy (15-20 minutes).
  6. For a thicker broth, mix cornstarch with water and stir into the pot for an additional few minutes.
  7. Serve sliced chicken over rice with broth ladled on top.
