  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 ripe bananas, sliced thick
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/3 cup brown sugar
  • 2 tbsp butter
  • 2 tbsp dark rum
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with sugar and melted butter. Press into a springform pan and bake for 8 minutes. Cool.
  2. Reduce oven to 325°F (163°C). Beat cream cheese until smooth, gradually adding sugar and eggs one at a time. Mix in sour cream and vanilla.
  3. Pour filling over the crust and bake for 55-65 minutes until edges are set but center jiggles slightly. Cool in the oven.
  4. Chill in the fridge for at least 4 hours.
  5. For caramelized bananas, melt butter in a skillet, add brown sugar, then banana slices until golden.
  6. For the rum glaze, melt butter and brown sugar in a saucepan; stir in dark rum and simmer.
  7. Top cheesecake with bananas and drizzle with rum glaze before serving.
